Radicchio recipe: how to cook the newest thing in the kitchen

Radicchio in a pan

First and foremost wash the radicchio and remove the not-looking-that-good leaves. Remove the leaves form the central core and cut it into strips.

Then pour three spoons of olive oil in the pan. When it is hot, add half of an onion that you have previously chopped in tiny dices.

Once the onion dices start to turn into gold (not actual gold, I mean the color “gold”) add the radicchio leaves and have them cook for like 5 to 7 minutes. Shake the pan like a pro so that the leaves do not stick to the bottom of the pan.

Oven baked radicchio

Again…wash the radicchio but this time do not detach the leaves. Once you have dry it with a cloth, cut it into quarters lengthwise.

Put the quarters inside a baking tray lined with baking paper (without overlapping them) sprinkle with extra virgin olive oil, a pinch of salt and black pepper.

Bake it for around 15 minutes at 360 F (It would be 180 C).

The oven baked radicchio is ready! You want to serve it warm with meats.

Pasta with radicchio and nuts

Ok now that you have mastered the cooking of radicchio you are ready for the next step. Here is how to cook pasta with a radicchio and nuts sauce

Ingredients

Radicchio – One head

White onion – Half would be more than enough

Olive oil – Three to five spoons

Salt – A pinch

Cooking cream – 9 Oz ( It would be 250 gr)

Walnuts – 3 Oz (It would be 80 gr)

Procedure

Cut the radicchio finely and rinse it carefully.

Fry the onion with a little olive oil, then add the radicchio, salt and stir.

Let it cook for a while, just long enough for the radicchio to dry.

Add the cooking cream and let it thicken and flavor for three or four minutes, stirring a few times.

Cook and drain the pasta, sauté it in the pan, add the chopped walnuts.

The radicchio, cream and walnut pasta is ready!
